I'm going to vote Hippo, but I'm not entirely convinced it's not a cow. Of course I've never seen either in pink, so that may be throwing me off.

Could it be a new mythical creature called a Cowpo? Or maybe a Hipow? Face of a hippo, body of a cow?
You mean it's not an owl? Well, if owl is out, then I say hippo.
